  • 2 cups powdered sugar, sifted

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  3. In a large bowl, beat softened butter and sugars until fluffy. Add egg, red food coloring, and vanilla; mix until well combined.
  4. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  5. Scoop tablespoon-sized portions onto prepared sheets about two inches apart. Bake for 10 minutes until edges are set but centers are soft.
  6. While cooling, beat cream cheese and powdered sugar until smooth. Once cooled, spread frosting between two cookies to create sandwiches.
