Instructions

- Blanch asparagus and peas in boiling salted water for 2-3 minutes until bright green. Drain and plunge into ice water to cool.

- In a large bowl, combine blanched asparagus, sweet peas, halved cherry tomatoes, and mint leaves. Drizzle with lemon vinaigrette and toss gently.
