  • 1 lb lean ground beef (80/20)
  • 1 cup plain or Italian-seasoned breadcrumbs
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 12 large eggs
  • 1/2 cup ketchup (reserve some for glazing)
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Finely chop the onion and mince the garlic.
  2. In a skillet over medium heat, sauté the onion in olive oil until soft; add minced garlic and cook for an additional minute.
  3. In a large bowl, combine ground beef, sautéed onions and garlic, breadcrumbs, eggs, ketchup (reserve some), Worcestershire sauce, salt, and pepper. Mix until just combined.
  4. Shape the mixture into a loaf on a clean surface.
  5. Heat oil in the skillet over medium heat and carefully place the loaf inside. Cook for about 10 minutes on each side until browned.
  6. Brush remaining ketchup on top of the meatloaf, cover with a lid, and reduce heat to low. Cook for an additional 20 minutes or until the internal temperature reaches at least 160°F (70°C).
