Description

This Strawberry Delight Cake Roll is a light, fluffy sponge cake filled with creamy strawberry filling and fresh strawberries. Perfect for special occasions or a sweet treat!

 


Ingredients

  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 cup powdered sugar (for dusting)
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar (for filling)
  • 1 cup diced fresh strawberries

Instructions

  1. Prepare the Sponge Cake:
    • Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
    • Beat eggs and granulated sugar until light and fluffy. Add vanilla extract. Gradually fold in flour and baking powder.
    • Pour batter into the pan and spread evenly. Bake for 10–12 minutes.
  2. Roll the Cake:
    • Dust a clean kitchen towel with powdered sugar. Turn the baked cake onto the towel and peel off parchment paper. Roll the cake gently with the towel while warm. Cool completely.
  3. Make the Filling:
    • Beat heavy whipping cream and powdered sugar until stiff peaks form. Fold in diced strawberries.
  4. Assemble the Roll:
    • Unroll the cake, spread the strawberry cream filling evenly, and re-roll. Dust with powdered sugar before serving.

Notes

  • Chill the cake roll for 1–2 hours before slicing for the best results.
  • Swap strawberries for other berries like raspberries or blueberries for a variation.
  • Use a serrated knife to slice the roll cleanly.
