Description

Twice Baked Sweet Potatoes are a delightful and comforting dish that perfectly balances sweet and savory flavors. Ingredients

  • 2 medium sweet potatoes (about 1 lb)
  • 2 tbsp unsalted butter
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream (or Greek yogurt)
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with aluminum foil.
  2. Wash the sweet potatoes and poke holes in them. Bake for about 45 minutes until tender.
  3. Allow to cool slightly, then cut each potato in half and scoop out the flesh into a bowl.
  4. Mix the sweet potato flesh with butter, cheddar cheese, sour cream, and green onions until smooth.
  5. Spoon the mixture back into the potato skins, topping with extra cheese if desired. Bake for an additional 15-20 minutes until golden.
  6. Serve warm, garnished with additional green onions or bacon bits.
