- 2 tbsp unsalted butter
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream (or Greek yogurt)
- 2 green onions, chopped
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with aluminum foil.
- Wash the sweet potatoes and poke holes in them. Bake for about 45 minutes until tender.
- Allow to cool slightly, then cut each potato in half and scoop out the flesh into a bowl.
- Mix the sweet potato flesh with butter, cheddar cheese, sour cream, and green onions until smooth.
- Spoon the mixture back into the potato skins, topping with extra cheese if desired. Bake for an additional 15-20 minutes until golden.
