Ingredients

  • 2 cups ripe dragon fruit (diced)
  • 1 cup full-fat coconut milk
  • 2 tsp agar-agar powder
  • 3 tbsp maple syrup (adjust to taste)
  • 1 tsp pure vanilla extract
  • 2 tbsp fresh lime juice

Instructions

  1. Blend diced dragon fruit, coconut milk, maple syrup, vanilla extract, and lime juice until smooth.
  2. In a saucepan over medium heat, pour in the blended mixture. Gradually sprinkle in agar-agar while stirring continuously until fully dissolved (about 5 minutes).
  3. Remove from heat and let cool slightly before pouring into silicone molds or glasses. Tap gently to eliminate air bubbles.
  4. Refrigerate for at least 4 hours or until set.
  5. Unmold or serve directly in glasses and garnish as desired.
