  • 1/2 cup buffalo sauce store-bought or homemade
  • 1 tbsp olive oil for grilling

For the Salad
  • 4 cups mixed salad greens such as romaine, spinach, and arugula
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced

For the Dressing
  • 1/2 cup Greek yogurt plain, for a healthier dressing
  • 1/4 cup buttermilk adjust for desired consistency
  • 2 tbsp buffalo sauce to taste
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp garlic powder for flavor
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Method
 

Prepare the Chicken
  1. Preheat your grill or skillet over medium-high heat. This ensures a nice sear on the chicken, locking in moisture.
  2. Rub the chicken breasts with olive oil, salt, and black pepper. This enhances the flavor and helps the buffalo sauce adhere.
  3. Grill or cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). This ensures the chicken is fully cooked.
  4. Remove the chicken from heat and let it rest for 5 minutes. This allows the juices to redistribute, making the chicken more tender.
  5. Once rested, slice the chicken into strips and toss it in buffalo sauce until well coated.
Prepare the Salad
  1. In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion. Toss gently to combine.
  2. Add the sliced buffalo chicken on top of the salad mixture.
  3. Sprinkle the crumbled blue cheese over the salad for added flavor.
Make the Dressing
  1. In a separate bowl, whisk together Greek yogurt, buttermilk, buffalo sauce, lemon juice, garlic powder, salt, and black pepper. This creates a creamy and tangy dressing.
