Ingredients
  

Pasta
  • 12 oz Penne pasta Use whole wheat or gluten-free if desired.
Sauce
  • 2 tbsp Olive oil Extra virgin for best flavor.
  • 3 cloves Garlic Minced.
  • 1 cup Cherry tomatoes Halved.
  • 1/2 tsp Salt Adjust to taste.
  • 1/4 tsp Black pepper Freshly ground.
  • 1/4 cup Fresh basil Chopped, plus extra for garnish.
  • 1 tbsp Balsamic glaze Store-bought or homemade.
Cheese
  • 8 oz Burrata cheese At room temperature for easy mixing.

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. This helps to flavor the pasta as it cooks.
  2. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
  3. Once cooked, reserve 1/2 cup of pasta water and then drain the pasta in a colander.
Prepare the Sauce
  1. In a large skillet, heat the olive oil over medium heat. This will help to infuse the oil with garlic flavor.
  2. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned, to avoid bitterness.
  3. Add the halved cherry tomatoes, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.
Combine Pasta and Sauce
  1. Add the drained pasta to the skillet with the tomato mixture. Toss to combine, ensuring the pasta is well coated.
  2. If the pasta seems dry, add a little reserved pasta water, one tablespoon at a time, until desired consistency is reached.
  3. Stir in the chopped basil, mixing well to incorporate the fresh flavor.
Serve
  1. Transfer the pasta to a serving bowl. Tear the burrata cheese into pieces and place it on top of the pasta.
  2. Drizzle with balsamic glaze and garnish with additional fresh basil.
  3. Serve immediately, allowing the burrata to melt slightly into the warm pasta for a creamy texture.
