- Transfer leftovers to shallow, airtight containers within 2 hours of cooking and refrigerate for up to 3 to 4 days. Shallow containers allow the steak and rice to cool more quickly and evenly.
- The dish can be frozen, although the rice may soften slightly and the cheese can become less creamy after thawing. Cool the food completely in the refrigerator, portion it into freezer-safe containers, and freeze for up to 2 months. Thaw overnight in the refrigerator.
- Reheat individual portions in the microwave with 1 to 2 teaspoons of water or broth sprinkled over the rice. Cover loosely and stir midway through reheating. Alternatively, warm the dish in a covered skillet over low heat with a small splash of broth. Reheated leftovers should reach 165°F (74°C).
- For advance preparation, slice and season the steak up to 1 day ahead and keep it refrigerated in an airtight container. Dice the onion and pepper and shred the cheeses up to 2 days ahead, storing each component separately. Cook the rice dish shortly before serving for the best beef texture.
Notes
For the best texture, ensure the steak is sliced thinly against the grain and that the rice is rinsed thoroughly to remove excess starch.
