Method
 

Prepare the Chia Pudding
  1. In a mixing bowl, combine the chia seeds, coconut milk, maple syrup, vanilla extract, and salt. Whisk together until the chia seeds are evenly distributed and there are no clumps.
  2. Let the mixture sit for about 5 minutes. This allows the chia seeds to absorb some liquid and start to swell.
  3. After 5 minutes, whisk the mixture again to break up any clumps of chia seeds. This ensures a smooth and creamy pudding.
  4. Cover the bowl with plastic wrap or transfer the mixture to individual serving glasses or bowls.
  5. Refrigerate for at least 2 hours or overnight. The longer it sits, the thicker it will become as the chia seeds continue to absorb the liquid.
Serve the Pudding
  1. Once the pudding has thickened, remove it from the refrigerator. If it's too thick, you can stir in a little more coconut milk to reach your desired consistency.
  2. Top with fresh berries, shredded coconut, and chopped nuts as desired. This adds flavor, texture, and visual appeal.
