Method
Prepare the Chicken Mixture
- Preheat your oven to 350°F (175°C). This ensures that the casserole cooks evenly.
- In a mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, and thawed mixed vegetables. Stir until well combined.
- Add garlic powder, onion powder, salt, and black pepper to the mixture. Mix thoroughly to ensure the spices are evenly distributed.
Assemble the Casserole
- Transfer the chicken mixture into a greased 9x13 inch baking dish, spreading it evenly.
- In a separate bowl, combine the crushed Ritz crackers with melted butter. Mix until the crackers are well coated.
- Sprinkle the Ritz cracker mixture evenly over the chicken mixture in the baking dish. If using, sprinkle shredded cheddar cheese on top for added flavor.
Bake the Casserole
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
- Remove from the oven and let it cool for about 5 minutes before serving. This allows the casserole to set slightly, making it easier to serve.

Notes
This casserole can be made ahead of time and stored in the refrigerator for up to 2 days before baking. Just cover it tightly with foil. You can also substitute the chicken with turkey or a vegetarian protein for a different twist.
