  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon dijon mustard

  • 1/4 teaspoon black pepper freshly ground, to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the drained chickpeas, diced cucumber, halved cherry tomatoes, finely diced red onion, chopped parsley, and crumbled feta cheese (if using). Toss gently to mix the ingredients evenly.

Make the Dressing
  1. In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, dijon mustard, salt, and black pepper until well combined.
  2. Whisking emulsifies the oil and vinegar, creating a smooth dressing that coats the salad evenly.
