Ingredients
  

For the Chickpea Salad
  • 1 can chickpeas drained and rinsed
  • 1 medium celery stalk finely diced
  • 1/4 cup red onion finely diced
  • 1/2 cup red bell pepper finely diced
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground
For Assembly
  • 8 slices whole grain bread or your choice of bread
  • 4 leaves romaine lettuce
  • 1 medium tomato sliced

Method
 

Prepare the Chickpea Salad
  1. In a mixing bowl, add the drained and rinsed chickpeas. Use a fork to mash them gently, leaving some whole for texture.
  2. Add the finely diced celery, red onion, red bell pepper, and chopped parsley to the bowl. These ingredients add crunch and flavor.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, Dijon mustard, garlic powder, salt, and black pepper until well combined. This dressing will enhance the flavors of the salad.
  4. Pour the dressing over the chickpea mixture and stir until everything is evenly coated. Taste and adjust seasoning if necessary.
Assemble the Sandwiches
  1. Lay out the slices of whole grain bread on a clean surface. This will be the base for your sandwiches.
  2. On four slices of bread, layer a leaf of romaine lettuce, followed by a generous scoop of the chickpea salad.
  3. Top with slices of tomato for added freshness and flavor.
  4. Finish with the remaining slices of bread to create sandwiches. Press down gently to hold everything together.
  5. Cut each sandwich in half diagonally for easy serving and enjoy!
