Method
- Preheat the oven
- Preheat your oven to 375°F (190°C). Position a rack in the center of the oven and set out a 9 × 13-inch (23 × 33 cm) baking dish or rimmed baking sheet.
- Cut four pieces of heavy-duty aluminum foil, each approximately 12 × 12 inches (30 × 30 cm).
- Prepare the onions
- Trim a thin slice from each root end to create a flat base, keeping the root core intact so the layers remain connected.
- Score the onions
- Using a sharp knife, cut a cross into the top of each onion, about halfway to two-thirds of the way down.
- Keep the bottom intact: Gently separate the top layers just enough to create openings for the seasoned butter.
- Avoid cutting completely through the onion, which could cause it to fall apart during baking.
- Make the seasoned garlic butter
- Melt the ½ cup (113 g) unsalted butter in a small microwave-safe bowl or saucepan over low heat.
- Stir in the 4 minced garlic cloves, 2 teaspoons Cajun seasoning, 1 teaspoon smoked paprika, ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon black pepper, ¼ teaspoon fine salt, and optional ¼ teaspoon red pepper flakes.
- The mixture should look glossy and reddish-orange, with the spices evenly dispersed. Stir again before portioning because some spices will settle.
- Season the onions
- Divide the seasoned butter evenly among the four onions, approximately 2 tablespoons (30 ml) per onion.
- Spoon the butter slowly over the scored tops, allowing it to seep between the layers. Let any remaining butter collect around the base inside the foil.
- Wrap the onions
- Bring the sides of each foil square upward and fold the edges together to create a sealed packet.
- Leave a little space above each onion so steam can circulate, but make sure the folds are secure enough to prevent the butter from leaking.
- Bake until tender
- Bake at 375°F (190°C) for approximately 50–60 minutes, using 55 minutes as a starting point.
- Carefully open one packet to check doneness, keeping your hands away from escaping steam.
- A knife should slide easily through the thickest part of the onion, and the layers should look translucent and soft. If the center still feels firm, reseal the packet and continue baking in 5–10-minute increments.
- Rest the onions
- Remove the baking dish from the oven and let the packets rest for 5 minutes.
- Carefully unfold the foil, allowing the hot steam to escape away from your face and hands.
- The onions should be very tender, with slightly separated layers and buttery juices collected underneath.
- Garnish and serve
- Spoon the warm garlic butter from the bottom of each packet back over its onion.
- Sprinkle with the optional 2 tablespoons (8 g) chopped fresh parsley, divided evenly among the portions.
- Serve immediately while the onions are warm and soft. Place each onion in a shallow bowl or on a rimmed plate to catch the flavorful cooking juices.
Notes
Refrigeration Allow leftover onions to cool slightly, then transfer them with their cooking juices to an airtight container. Refrigerate within 2 hours of cooking and use within 3–4 days.
