Ingredients
  

For the Blondie Batter
  • 1 cup unsalted butter melted and slightly cooled
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour sifted
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
For the Mix-ins
  • 1 cup Easter M&Ms plus extra for topping
  • 1/2 cup white chocolate chips

Method
 

Prepare the Baking Pan
  1. Preheat your oven to 350°F (175°C). This ensures that the blondies bake evenly and rise properly.
  2. Line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides. This will make it easier to lift the blondies out after baking.
Make the Blondie Batter
  1. In a mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until smooth and well combined. The melted butter helps to dissolve the sugars, creating a chewy texture.
  2. Add the eggs one at a time, whisking well after each addition. Then mix in the vanilla extract. This adds moisture and flavor to the batter.
  3. In a separate bowl, whisk together the sifted flour, baking powder, baking soda, and salt. This ensures that the leavening agents are evenly distributed throughout the flour.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula. Be careful not to overmix; stop when you see no more flour streaks.
Add Mix-ins and Bake
  1. Gently fold in the Easter M&Ms and white chocolate chips until evenly distributed. This adds color and sweetness to the blondies.
  2. Pour the batter into the prepared baking pan and spread it evenly. Top with a few extra M&Ms for decoration.
  3. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs. This indicates that the blondies are done but still chewy.
Cool and Serve
  1. Allow the blondies to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack.
