Ingredients
  

For the Rice Paper Rolls
  • 8 sheets rice paper Use round rice paper sheets, available in Asian markets.
  • 1 cup cooked shrimp Peeled and deveined, cut in half lengthwise.
  • 1 cup cooked vermicelli noodles Follow package instructions for cooking.
  • 1 cup shredded carrots Use a grater or julienne for thin strips.
  • 1 cup cucumber Julienned or thinly sliced.
  • 1 cup fresh mint leaves Remove leaves from stems.
  • 1 cup fresh cilantro leaves Remove leaves from stems.
  • 1 cup lettuce leaves Butter or romaine lettuce works well.
For the Dipping Sauce
  • 3 tablespoons hoisin sauce Can be found in Asian grocery stores.
  • 1 tablespoon peanut butter Smooth or crunchy, based on preference.
  • 1 tablespoon water To thin the sauce.
  • 1 teaspoon lime juice Freshly squeezed for best flavor.
  • 1 teaspoon sriracha Adjust to taste for spiciness.

Method
 

Prepare the Dipping Sauce
  1. In a small saucepan, combine hoisin sauce, peanut butter, water, lime juice, and sriracha.
  2. Heat over low heat, stirring until smooth and well combined. Remove from heat and set aside.
Prepare the Filling
  1. Prepare all the filling ingredients: cooked shrimp, vermicelli noodles, shredded carrots, cucumber, mint, cilantro, and lettuce.
  2. Make sure everything is cut into thin strips or small pieces for easy rolling.
Assemble the Rice Paper Rolls
  1. Fill a large mixing bowl with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it becomes soft and pliable.
  2. Lay the softened rice paper on a clean, flat surface or plate.
  3. In the center of the rice paper, place a few shrimp halves, a small amount of vermicelli noodles, shredded carrots, cucumber, mint, cilantro, and a lettuce leaf.
  4. Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top, ensuring the filling is secure.
  5. Repeat the process with the remaining rice paper sheets and filling ingredients.
Serve
  1. Arrange the rice paper rolls on a serving platter and serve with the dipping sauce on the side.
  2. Enjoy your fresh rice paper rolls as a healthy appetizer or snack!

Notes

Rice paper rolls are best served fresh. If you need to store them, cover with a damp cloth to prevent drying out.
