Prepare the Dipping Sauce
- In a small saucepan, combine hoisin sauce, peanut butter, water, lime juice, and sriracha.
- Heat over low heat, stirring until smooth and well combined. Remove from heat and set aside.
Prepare the Filling
- Prepare all the filling ingredients: cooked shrimp, vermicelli noodles, shredded carrots, cucumber, mint, cilantro, and lettuce.
- Make sure everything is cut into thin strips or small pieces for easy rolling.
Assemble the Rice Paper Rolls
- Fill a large mixing bowl with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it becomes soft and pliable.
- Lay the softened rice paper on a clean, flat surface or plate.
- In the center of the rice paper, place a few shrimp halves, a small amount of vermicelli noodles, shredded carrots, cucumber, mint, cilantro, and a lettuce leaf.
- Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top, ensuring the filling is secure.
- Repeat the process with the remaining rice paper sheets and filling ingredients.
Serve
- Arrange the rice paper rolls on a serving platter and serve with the dipping sauce on the side.
