Ingredients
  

For the Donuts
  • 1 cup almond flour finely ground
  • 1 cup gluten-free all-purpose flour ensure it contains xanthan gum
  • 1/2 cup granulated sugar
  • 2 tsp baking powder ensure gluten-free
  • 1/2 tsp salt
  • 2 large eggs room temperature
  • 1/2 cup milk dairy or non-dairy
  • 1/4 cup melted coconut oil or vegetable oil
  • 1 tsp vanilla extract
For the Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk dairy or non-dairy
  • 1 tsp vanilla extract
  • 1 tbsp cocoa powder optional for chocolate glaze

Method
 

Prepare the Donut Batter
  1. Preheat your oven to 350°F (175°C). This ensures that the donuts bake evenly and rise properly.
  2. In a large mixing bowl, combine the almond flour, gluten-free all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well combined.
  3. In another bowl, whisk together the eggs, milk, melted coconut oil, and vanilla extract until smooth. This mixture adds moisture and flavor to the donuts.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix, as this can make the donuts dense.
Bake the Donuts
  1. Grease the donut pan lightly with cooking spray or oil to prevent sticking.
  2. Spoon the batter into the donut pan, filling each cavity about 2/3 full. This allows space for the donuts to rise without overflowing.
  3. Bake in the preheated oven for 12-15 minutes, or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.
  4. Remove the donuts from the oven and let them cool in the pan for 5 minutes before transferring them to a cooling rack.
Prepare the Glaze
  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. If you want a chocolate glaze, add the cocoa powder and mix until combined.
  2. Once the donuts are completely cooled, dip the tops of each donut into the glaze, allowing excess to drip off.
  3. Place the glazed donuts back on the cooling rack to set for about 10 minutes.
