- Prepare the Spices: Lightly crush the cinnamon sticks, cardamom pods, cloves, and peppercorns with the side of a knife or the bottom of a small pan. - Combine the Water and Spices: Add the water, crushed cinnamon, cardamom, cloves, peppercorns, and sliced ginger to a 2- to 3-quart saucepan. This mixture will form the base of your chai concentrate, allowing the spices to infuse their flavors into the water.
- Bring to a Simmer: Set the saucepan over medium-high heat and bring the mixture just to a boil. Reduce the heat to low so the liquid maintains a gentle simmer. This gentle simmering is essential for extracting the flavors without boiling away the aromatic qualities of the spices.
- Extract the Spice Flavor: Cover partially and simmer for 10 minutes. The liquid should become golden-brown and smell strongly of cinnamon, ginger, and cardamom. This step allows the spices to release their full flavor profile into the water, creating a rich base for your chai.
- Add the Sugar: Stir in the brown sugar until completely dissolved, about 30 seconds. The sugar not only sweetens the concentrate but also enhances the overall flavor, adding a subtle caramel note that balances the spices.
- Steep the Tea: Remove the saucepan from the heat. Add the tea bags or loose tea, cover, and steep for 5 minutes. Avoid steeping much longer, as strong black tea can become noticeably bitter. This step is critical for achieving the right balance of strength and flavor in your concentrate.
- Remove the Tea: Lift out the tea bags without aggressively squeezing them. If using loose tea, leave it in place until the concentrate is strained. This prevents any bitter flavors from being released into the concentrate.
- Add the Vanilla: Stir in the vanilla extract: The concentrate should taste intentionally strong and slightly sweeter than a finished cup because it will be diluted before serving. The vanilla adds a warm, aromatic layer to the chai concentrate.
- Strain the Concentrate: Pour the mixture through a fine-mesh strainer into a heatproof measuring cup or bowl. Discard the spices, ginger, and loose tea. Straining is important to ensure a smooth texture in your final drink.
