Lemon Glazed Loaf Cake

A moist, tender lemon loaf made with fresh lemon zest and juice and topped with a sweet and tangy lemon glaze.

Ingredients
  

Loaf
  • 1½ cups all-purpose flour 190 g
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter 113 g, softened
  • 1 cup granulated sugar 200 g
  • 2 large eggs at room temperature
  • 2 tablespoons lemon zest from about 2 lemons
  • ¼ cup fresh lemon juice 60 mL
Lemon Glaze
  • 1 cup powdered sugar 120 g
  • 2 tablespoons fresh lemon juice

Method
 

Method
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan with butter or nonstick spray, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a larger bowl, cream the softened butter and sugar together until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, then stir in the lemon zest and lemon juice.
  5. Gradually add the dry mixture to the wet mixture and stir until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake cools slightly on a wire rack, whisk the powdered sugar and lemon juice until smooth. Drizzle the glaze generously over the warm loaf.
  8. Slice and serve with extra lemon slices on the side if you like.

Notes

Store at room temperature for up to 3 days, or refrigerate for up to a week. Freeze wrapped slices and thaw at room temperature.
