Ingredients
  

Pumpkin Spice Latte
  • 1 1/2 cups whole milk (360 ml) or milk of choice
  • 2 tablespoons pumpkin puree (30 g) not pumpkin pie filling
  • 2 tablespoons pure maple syrup (30 ml)
  • 1/2 teaspoon pumpkin pie spice (1 g)
  • 1/4 teaspoon ground cinnamon (0.7 g)
  • 1/2 teaspoon pure vanilla extract (2.5 ml)
  • 2 shots espresso (about 2 fluid ounces / 60 ml) freshly brewed
  • Pinch of kosher salt (about 0.2 g)
Optional Topping
  • 1/2 cup whipped cream (60 g) optional
  • 1/8 teaspoon pumpkin pie spice (0.3 g) optional, for sprinkling

  1. Add the milk, pumpkin puree, maple syrup, pumpkin pie spice, cinnamon, vanilla extract, and salt to a small saucepan. Whisk until smooth and place over medium-low heat.
  2. Warm the mixture for 3–4 minutes, whisking occasionally, until steaming and hot but not boiling. The pumpkin should be fully incorporated and the milk should look smooth and lightly frothy around the edges.
  3. While the milk mixture heats, brew 2 shots of espresso. Divide the espresso evenly between 2 heatproof mugs.
  4. Slowly pour the hot pumpkin milk mixture over the espresso, dividing it evenly between the mugs. Whisk or stir each latte briefly to combine.
  5. For a foamier latte, use a handheld milk frother for about 10–15 seconds. The surface should develop a light layer of fine foam without becoming overly bubbly.
  6. Top each latte with whipped cream if desired and sprinkle lightly with pumpkin pie spice. Serve immediately while hot.
