Ingredients

For the Salad
  • 1 bunch radishes washed and thinly sliced
  • 1 medium carrot peeled and grated
  • 1 medium avocado diced
  • 1 cup cucumber diced
  • 1/4 cup fresh parsley chopped
For the Dressing
  • 3 tablespoons olive oil extra virgin recommended
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey or maple syrup for vegan option
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method

Prepare the Salad Ingredients
  1. Wash and thinly slice the radishes using a sharp knife. This ensures even slices that will provide a consistent crunch in every bite.
  2. Peel and grate the carrot. Grating the carrot adds a sweet flavor and a nice texture that complements the radishes.
  3. Dice the avocado carefully to avoid bruising it. The creaminess of the avocado balances the peppery flavor of the radishes.
  4. Dice the cucumber. This adds a refreshing crunch and helps to balance the flavors in the salad.
  5. Chop the fresh parsley. This adds a burst of freshness and color to the salad.
Make the Dressing
  1. In a small mixing bowl, combine the olive oil, lemon juice, honey, salt, and black pepper. Whisk together until fully emulsified. This creates a smooth dressing that coats the salad evenly.
Assemble the Salad
  1. In a large mixing bowl, combine the sliced radishes, grated carrot, diced avocado, diced cucumber, and chopped parsley. Toss gently to combine all the ingredients without mashing the avocado.
  2. Drizzle the dressing over the salad and toss gently again to ensure everything is well coated. This step is crucial as it enhances the flavors of the salad.
  3. Transfer the salad to a serving bowl and serve immediately for the best texture and flavor.
