Ingredients

For the Bake
  • 8 large eggs room temperature
  • 1 cup milk whole or 2% milk
  • 1 cup shredded cheddar cheese or your favorite cheese
  • 1 cup cooked breakfast sausage crumbled
  • 1 cup bell peppers diced (any color)
  • 1 cup spinach fresh, roughly chopped
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
For Serving
  • 1/4 cup sour cream optional
  • 1/4 cup salsa optional
  • 1 avocado sliced optional

Method

Prepare the Oven and Ingredients
  1. Preheat your oven to 375°F (190°C). This ensures that your breakfast bake cooks evenly and thoroughly.
  2. Grease a large sheet pan (18x13 inches) with cooking spray or olive oil to prevent sticking.
  3. In a mixing bowl, crack the eggs and whisk them together with the milk, salt, black pepper, garlic powder, and onion powder until well combined. This mixture will create a fluffy texture when baked.
Combine Ingredients
  1. Add the crumbled sausage, diced bell peppers, and chopped spinach to the egg mixture. Stir gently with a spatula until everything is evenly distributed.
Bake the Breakfast
  1. Pour the egg and vegetable mixture into the prepared sheet pan, spreading it out evenly.
  2. Sprinkle the shredded cheddar cheese evenly over the top. This will melt and create a delicious cheesy layer.
  3. Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the eggs are set and the top is lightly golden. You can check for doneness by inserting a toothpick in the center; it should come out clean.
Serve
  1. Once baked, remove the sheet pan from the oven and let it cool for a few minutes.
  2. Cut into squares and serve warm with optional toppings like sour cream, salsa, or sliced avocado.
