Sweet Chili Halloumi Wraps

A quick stovetop meal featuring halloumi cheese, fresh vegetables, and a creamy sweet chili yogurt sauce, perfect for lunch or a light dinner.

Ingredients
  

For the Halloumi
  • 14 ounces halloumi cheese sliced into 1/2-inch strips
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground black pepper
For the Sweet Chili Yogurt Sauce
  • 1/2 cup plain Greek yogurt
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon fresh lime juice
  • 1 small garlic clove finely grated
For the Wrap Filling
  • 4 large flour tortillas about 10 inches
  • 2 cups shredded romaine lettuce
  • 1 cup shredded red cabbage
  • 1 medium cucumber thinly sliced
  • 1 large avocado sliced
  • 1/4 cup chopped fresh cilantro
For Serving
  • Lime wedges optional
  • Extra sweet chili sauce optional

Method
  1. Store the cooked halloumi, vegetables, and sauce separately in airtight containers in the refrigerator for up to 3 days. Reheat the halloumi briefly in a dry skillet over medium heat for 1 to 2 minutes per side until warmed through. Avoid microwaving, as the cheese can become rubbery.
  2. Prepare the sauce and vegetables up to 1 day ahead and refrigerate them separately. Slice the avocado immediately before serving to reduce browning. Freezing is not recommended because the vegetables lose their crisp texture and the halloumi's texture changes after thawing.

Notes

For the best texture, serve the wraps immediately after assembling to keep the halloumi warm and the vegetables crisp.
