Prepare the Watermelon Mixture
  1. Cut the watermelon into cubes, removing any seeds. This will ensure a smooth texture in the popsicles.
  2. In a blender, combine the cubed watermelon, lime juice, honey (or agave syrup), and coconut water (if using). Blend until completely smooth. This step is crucial for achieving a creamy popsicle texture.
Fill the Popsicle Molds
  1. Pour the watermelon mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.
  2. Insert popsicle sticks into the molds. If the mixture is too thin, let it sit for a few minutes until it thickens slightly before inserting the sticks.
