  • 4 medium zucchinis, spiralized
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup carrots, shredded
  • 1 cup firm tofu, cubed or 1 cup shrimp, peeled and deveined
  • 2 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1-inch fresh ginger, grated
  • 1 tbsp sesame oil
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Spiralize the zucchinis into noodles.
  2. If using tofu, press to remove moisture and cut into cubes; if using shrimp, clean and devein.
  3. In a large skillet over medium heat, heat sesame oil and sauté garlic and ginger until fragrant (about 1 minute).
  4. Add tofu or shrimp; cook until golden brown (5-7 minutes).
  5. Stir in bell peppers and carrots; sauté until slightly softened.
  6. Add zucchini noodles, soy sauce, and red pepper flakes; toss everything together for about 3 minutes until heated through.
