  • 1 tbsp toasted sesame oil
  • Water as needed for dressing consistency

Instructions

  1. Prepare edamame according to package instructions if using frozen. Rinse under cold water after cooking.
  2. Chop cucumber, shred carrots, and dice the red bell pepper into bite-sized pieces.
  3. In a small bowl, whisk together miso paste, soy sauce, rice vinegar, sesame oil, and a splash of water until smooth.
  4. In a large bowl, combine cooked edamame with chopped cucumber, shredded carrots, and diced bell pepper. Drizzle with dressing and toss to coat evenly.
