  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 tsp pure peppermint extract
  • 1 cup dark chocolate chips
  • ½ cup crushed candy canes (for topping)

Instructions

  1. 1. Preheat your oven to 350°F (175°C). In a bowl, mix crushed graham crackers, melted butter, and granulated sugar. Press the mixture into the bottom of a springform pan.
  2. 2. In a large bowl, beat cream cheese and powdered sugar until smooth. Add sour cream, vanilla extract, and peppermint extract; mix well. Beat in eggs one at a time until just blended.
  3. 3. Pour the filling over the crust and bake for about 50-55 minutes or until slightly jiggly in the center. Let cool for an hour before refrigerating for at least four hours.
