Description

Ingredients

  • 1 lb lean ground beef
  • 1 oz taco seasoning (1 packet)
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (any color)
  • 15 oz can black beans, rinsed and drained
  • 1 cup tomato sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 2 cups crushed tortilla chips
  • 1 avocado, sliced
  • ½ cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C). Prepare a baking dish.
  2. In a skillet over medium heat, brown the ground beef and chopped onion until meat is no longer pink. Drain excess fat.
  3. Stir in taco seasoning, black beans, and bell peppers until heated through.
  4. In the baking dish, layer half of the meat mixture, followed by half of the tomato sauce and half of the shredded cheese. Repeat layers.
  5. Top with crushed tortilla chips for added crunch.
  6. Cover with foil and bake for about 25 minutes. Remove foil and bake an additional 5 minutes until cheese is bubbly and chips are crispy.
  7. Serve warm topped with avocado slices and sour cream.
