- 1 lb lean ground beef
- 1 oz taco seasoning (1 packet)
- 1 medium onion, chopped
- 1 cup bell peppers, chopped (any color)
- 15 oz can black beans, rinsed and drained
- 1 cup tomato sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 2 cups crushed tortilla chips
- 1 avocado, sliced
- ½ cup sour cream
Instructions
- Preheat oven to 375°F (190°C). Prepare a baking dish.
- In a skillet over medium heat, brown the ground beef and chopped onion until meat is no longer pink. Drain excess fat.
- Stir in taco seasoning, black beans, and bell peppers until heated through.
- In the baking dish, layer half of the meat mixture, followed by half of the tomato sauce and half of the shredded cheese. Repeat layers.
- Top with crushed tortilla chips for added crunch.
- Cover with foil and bake for about 25 minutes. Remove foil and bake an additional 5 minutes until cheese is bubbly and chips are crispy.
- Serve warm topped with avocado slices and sour cream.
