Ingredients
  

For the Chicken
  • 4 pieces bone-in chicken thighs skin-on for extra flavor
  • 2 tablespoons olive oil extra virgin for best flavor
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 teaspoon paprika smoked paprika adds depth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano or Italian seasoning
For the Vegetables
  • 1 medium red onion sliced
  • 1 medium zucchini sliced into half-moons
  • 1 medium bell pepper sliced (any color)
  • 1 cup cherry tomatoes halved
  • 1 cup kalamata olives pitted and halved
For the Topping
  • 1/2 cup feta cheese crumbled
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Prepare the Chicken
  1. Preheat your oven to 400°F (200°C). This ensures that the chicken cooks evenly and the skin becomes crispy.
  2. In a mixing bowl, combine olive oil, salt, black pepper, paprika, garlic powder, and dried oregano. This mixture will season the chicken and enhance its flavor.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the seasoning mixture. Let them marinate for at least 10 minutes to absorb the flavors.
Prepare the Vegetables
  1. In the same bowl, add the sliced red onion, zucchini, bell pepper, cherry tomatoes, and kalamata olives. Drizzle with a little olive oil and toss to combine. This will create a colorful and flavorful bed for the chicken.
Assemble the Bake
  1. In a baking dish, spread the vegetable mixture evenly. Place the marinated chicken thighs on top of the vegetables, skin side up. This allows the juices from the chicken to flavor the vegetables.
  2. Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown.
Finish and Serve
  1. Remove the baking dish from the oven and sprinkle crumbled feta cheese over the chicken and vegetables. Return to the oven for an additional 5 minutes to allow the cheese to soften.
  2. Garnish with fresh parsley before serving. This adds a fresh flavor and a pop of color to the dish.
