Ingredients
  

For the Shredded Chicken
  • 2 cups shredded cooked chicken Use rotisserie chicken for convenience.
  • 1 tablespoon olive oil Extra virgin for best flavor.
  • 1 teaspoon ground cumin Adds a warm, earthy flavor.
  • 1 teaspoon chili powder Adjust based on spice preference.
  • 1/2 teaspoon garlic powder For added depth of flavor.
  • 1/2 teaspoon salt To taste.
  • 1/4 cup chicken broth Low sodium recommended.
For the Avocado Lime Sauce
  • 1 ripe avocado Should be soft to the touch.
  • 1 tablespoon lime juice Freshly squeezed for best flavor.
  • 1 clove garlic Minced.
  • 1/4 cup Greek yogurt Can substitute with sour cream.
  • 1/4 teaspoon salt To taste.
  • 1 tablespoon water To thin the sauce if necessary.
For Serving
  • 8 small corn tortillas Warm them before serving.
  • 1 cup shredded lettuce For crunch.
  • 1 cup diced tomatoes Fresh or canned.
  • 1/2 cup crumbled feta cheese Optional, for added flavor.

Method
 

Prepare the Shredded Chicken
  1. In a skillet over medium heat, add the olive oil. Allow it to heat for about 1 minute.
  2. Add the shredded chicken to the skillet, followed by the ground cumin, chili powder, garlic powder, salt, and chicken broth.
  3. Stir well to combine all the ingredients. Cook for about 5-7 minutes, stirring occasionally, until the chicken is heated through and the spices are well incorporated.
  4. Remove from heat and set aside.
Make the Avocado Lime Sauce
  1. In a blender, combine the ripe avocado, lime juice, minced garlic, Greek yogurt, and salt.
  2. Blend until smooth. If the sauce is too thick, add water a tablespoon at a time until you reach your desired consistency.
  3. Taste and adjust seasoning if necessary.
Assemble the Tacos
  1. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
  2. On each tortilla, add a generous portion of the shredded chicken.
  3. Top with shredded lettuce, diced tomatoes, and crumbled feta cheese if using.
  4. Drizzle the avocado lime sauce generously over the top.
  5. Serve immediately with lime wedges on the side.
