  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup sliced almonds
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In one bowl, beat the eggs until frothy. In another bowl, mix panko breadcrumbs, sliced almonds, and garlic powder.
  4. Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat thoroughly in the almond-panko mixture.
  5. Place coated chicken in the prepared baking dish and bake for 25-30 minutes or until golden brown and cooked through (internal temperature at least 165°F).
  6. While chicken bakes, whisk together soy sauce and honey in a small bowl.
  7. Serve the chicken drizzled with sauce.
