  • 1 cup fresh apple cider
  • 1 medium yellow onion (thinly sliced)
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 4 garlic cloves (minced)
  • 1 cup low-sodium chicken broth
  • 2 tbsp brown sugar
  • Salt and pepper to taste
  • 2 tbsp olive oil for searing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs generously with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken thighs skin-side down until golden brown, about 5-7 minutes. Flip and sear for an additional 3 minutes.
  4. Remove the chicken from the pan, add sliced onions and minced garlic, and sauté until softened (about 3 minutes).
  5. Pour in apple cider and chicken broth, scraping up any bits stuck to the skillet. Stir in brown sugar and thyme.
  6. Return the chicken thighs to the skillet skin-side up, then transfer to the preheated oven. Braise for about 30-35 minutes until cooked through and tender.
