  • 2 lb Beef Tenderloin
  • 2 tbsp Olive Oil
  • 3 cloves Fresh Garlic, minced
  • 2 tbsp Fresh Rosemary, chopped
  • 1 tsp Coarse Salt
  • 1 tsp Black Pepper
  • 1 cup Red Wine (Cabernet Sauvignon)
  • 1 cup Low-Sodium Beef Broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil and season generously with salt, pepper, garlic, and rosemary.
  3. Sear the tenderloin in a hot skillet over medium-high heat for 3-4 minutes on each side until golden brown.
  4. Transfer the seared tenderloin to a roasting pan and roast in the oven until it reaches an internal temperature of 135°F (57°C) for medium-rare (about 25-30 minutes).
  5. Let the beef rest covered with foil for about 10 minutes.
  6. In the same skillet, add red wine and scrape up any bits from the bottom. Pour in beef broth and simmer until reduced by half.
  7. Serve sliced tenderloin drizzled with sauce.
