  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp taco seasoning
  • 2 cups shredded cheddar cheese
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Chop chicken breasts into bite-sized pieces. Dice onion and bell peppers.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion and bell peppers until soft (about 5 minutes).
