- 4 medium fresh Anaheim or poblano chiles, roasted and chopped
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 4 cups low-sodium chicken broth
- Juice of 2 limes
Instructions
- Roast the chiles under the broiler until blistered (about 10 minutes), then peel and chop.
- In a heavy-bottomed pot, heat oil over medium-high heat. Sear seasoned pork cubes until browned on all sides (8–10 minutes).
- Lower heat to medium; add onions and sauté until translucent (about 5 minutes). Stir in minced garlic until fragrant (30 seconds).
- Add roasted chiles and cumin; mix well.
- Pour in chicken broth to cover the mixture. Bring to a boil, then reduce heat to low, cover, and simmer for about 2 hours or until the pork is fork-tender.
- Just before serving, squeeze fresh lime juice into the stew.
