  • 4 medium bell peppers
  • 1 lb lean ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the ground meat until browned; drain excess grease.
  4. In a bowl, mix cooked meat with black beans, diced tomatoes, chili powder, salt, and pepper until well combined.
  5. Stuff each pepper with the mixture and place them upright in a baking dish.
  6. Cover with foil and bake for 30 minutes. Remove foil, sprinkle with cheese, and bake for an additional 10-15 minutes until bubbly.
