Description

Christmas Pinwheel Cookies are a festive delight that combines vibrant colors and delicious flavors, making them the perfect treat for holiday gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 tsp red gel food coloring
  • 2 tsp green gel food coloring
  • Powdered sugar (for dusting)

Instructions

  1. In a large bowl, cream together the room temperature butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  2. In another bowl, whisk together the flour and a pinch of salt. Gradually combine this dry mixture into the wet ingredients until just combined; avoid overmixing.
  3. Divide the dough into two equal parts. Color one half with red gel food coloring and the other with green, kneading until colors are evenly mixed.
  4. Roll each colored dough into rectangles about 1/4 inch thick on a floured surface or parchment paper.
  5. Layer one rectangle on top of the other; roll tightly into a log shape. Wrap in plastic wrap and chill in the refrigerator for at least one hour.
  6. Preheat oven to 350°F (175°C). Slice the chilled log into rounds about half an inch thick and place them on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until lightly golden around the edges. Dust with powdered sugar before serving.
