Ingredients

Scale
  • 1 cup long-grain white rice
  • 2 cups vegetable broth or water
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Instructions

  1. Rinse the white rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice and vegetable broth or water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce heat to low and cover. Simmer for 15-20 minutes until liquid is absorbed and rice is fluffy. Remove from heat and let sit covered for an additional 5 minutes.
  4. Fluff the rice gently with a fork, then stir in lime juice and chopped cilantro.
  5. Season with salt, mixing well. Serve warm alongside your favorite dishes.
