  • 4 boneless, skinless chicken breasts (680g)
  • 1/2 cup freshly squeezed orange juice (120ml)
  • 1/4 cup freshly squeezed lemon juice (60ml)
  • 4 cloves garlic, minced
  • 2 tbsp olive oil (30ml)
  • 1 cup long-grain rice (190g)
  • 3 cardamom pods
  • 2 tbsp low-sodium soy sauce (30ml)

Instructions

  1. In a bowl, whisk together orange juice, lemon juice, garlic, and olive oil to create the marinade.
  2. Cut chicken into bite-sized pieces and marinate for at least one hour.
  3. Rinse rice under cold water. Boil water in a pot, add cardamom pods and rice, cover, and simmer for 15 minutes until tender.
  4. Skewer the marinated chicken onto skewers without overcrowding.
  5. Preheat grill to medium-high heat and cook kebabs for 10-12 minutes, turning occasionally until fully cooked.
