  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 tbsp red food coloring
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, beat together softened butter and granulated sugar until fluffy. Add eggs one at a time along with vanilla extract and red food coloring.
  3. In another bowl, sift together flour, cocoa powder, baking soda, and salt. Gradually combine with the wet mixture until smooth.
  4. In a separate bowl, mix cream cheese with powdered sugar until smooth.
  5. Take a tablespoon of dough, flatten it in your palm, place a teaspoon of cream cheese filling in the center, then wrap the dough around it.
  6. Place cookies on prepared sheets about two inches apart. Bake for 12-15 minutes until slightly firm but still soft inside.
  7. Cool on wire racks before serving.
