Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup wild rice blend
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop the onion finely and rinse the wild rice under cold water.
  2. Place the chicken breasts at the bottom of the crockpot and sprinkle with chopped onion.
  3. Add the wild rice on top of the chicken and onions evenly.
  4. In a separate bowl, whisk together chicken broth, heavy cream, soy sauce, dried thyme, salt, and pepper. Pour over the mixture in the crockpot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  6. Shred the chicken in the pot once done cooking; stir until creamy and serve.
