  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup roughly chopped pistachios
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract; mix until combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fold in chopped pistachios and chocolate chips.
  6. Scoop tablespoon-sized balls onto prepared baking sheets, spaced two inches apart. Bake for 10-12 minutes until edges are set but centers remain soft.
  7. Allow cookies to cool on wire racks before serving.
