  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 4 oz ramen noodles (fresh or dried)
  • 4 cups chicken broth
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1 cup mixed vegetables (bok choy and green onions)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil

Instructions

  1. Slice the chicken breasts into thin strips and season with salt and pepper.
  2. Heat oil in a skillet over medium-high heat, add chicken strips, and sauté until golden brown (5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté minced garlic until fragrant. Add chicken broth and bring to a simmer. Stir in Sriracha sauce.
  4. Cook ramen noodles according to package instructions; drain and set aside.
  5. Add cooked noodles back to the broth along with chicken and vegetables; simmer for an additional 3 minutes.
  6. Serve hot, garnished with green onions or sesame seeds.
