  • 1 cup long-grain rice (basmati or jasmine)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 tbsp freshly squeezed lemon juice
  • 1 cup bell peppers (any color), chopped
  • ¼ cup fresh parsley, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a large pan over medium heat, add olive oil and minced garlic; sauté until fragrant (about 1 minute).
  3. Add the rinsed rice and stir to coat in garlic oil; toast for about 2 minutes.
  4. Pour in the vegetable broth and bring to a boil; then add chopped bell peppers.
  5. Reduce heat to low, cover tightly, and let it simmer for 18-20 minutes until liquid is absorbed.
  6. Remove from heat and let sit covered for an additional 5 minutes; fluff with a fork before adding lemon juice and parsley.
