Ingredients

  • 8 oz fresh tomatillos (about 5-6)
  • 2 medium jalapeño peppers
  • 3 cloves garlic
  • 1 cup fresh cilantro leaves
  • 2 tbsp lime juice (freshly squeezed)
  • 1 cup vegetable broth (low-sodium)
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 450°F (230°C). Arrange halved tomatillos and jalapeños on a baking sheet lined with parchment paper. Roast for about 20 minutes until slightly charred.
  2. In a blender, combine roasted tomatillos, jalapeños, garlic cloves, cilantro, lime juice, vegetable broth, salt, and pepper. Blend until smooth.
  3. Transfer the mixture to a saucepan over medium heat and simmer for 10 minutes to meld flavors.
  4. Adjust seasoning as needed by tasting.
