Ingredients

Scale
  • 1 lb ground beef (80/20)
  • 2 cups elbow macaroni
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup whole milk

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef for about 5-7 minutes until crumbly. Drain excess fat if necessary.
  2. Add the chopped onion and minced garlic; sauté for 3-4 minutes until the onion is translucent.
  3. Stir in the elbow macaroni and pour in the beef broth along with enough water to cover the mixture by an inch.
  4. Bring to a boil, then reduce heat and simmer uncovered for about 8-10 minutes until pasta is al dente, stirring occasionally.
  5. Remove from heat and stir in shredded cheddar cheese and milk until melted and creamy. Adjust consistency with more milk if desired.
  6. Serve immediately garnished with fresh parsley if desired.
