Description

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 3 tbsp harissa paste
  • 2 tbsp raw honey
  • 2 tbsp low-sodium soy sauce
  • 1 cup cooked rice or quinoa
  • 2 cups fresh vegetables (bell peppers and zucchini)

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray and season the chicken with salt and pepper.
  2. In a small bowl, mix harissa paste, honey, and soy sauce until well combined.
  3. Place the chicken in the baking dish and pour half of the sauce over it, ensuring it’s well-coated.
  4. Bake for 25-30 minutes until cooked through. Flip halfway if desired.
  5. While the chicken bakes, cook rice or quinoa according to package instructions and chop fresh veggies.
  6. Once done, slice the chicken and serve over rice or quinoa, topped with veggies and remaining sauce.
