- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 3 tbsp harissa paste
- 2 tbsp raw honey
- 2 tbsp low-sodium soy sauce
- 1 cup cooked rice or quinoa
- 2 cups fresh vegetables (bell peppers and zucchini)
Instructions
- Preheat the oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray and season the chicken with salt and pepper.
- In a small bowl, mix harissa paste, honey, and soy sauce until well combined.
- Place the chicken in the baking dish and pour half of the sauce over it, ensuring it’s well-coated.
- Bake for 25-30 minutes until cooked through. Flip halfway if desired.
- While the chicken bakes, cook rice or quinoa according to package instructions and chop fresh veggies.
- Once done, slice the chicken and serve over rice or quinoa, topped with veggies and remaining sauce.
