  • 3 lbs chuck roast
  • 1 cup low-sodium beef broth
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp black pepper
  • 1 cup BBQ sauce (store-bought or homemade)

Instructions

  1. Set your Instant Pot to 'Sauté' mode. Add oil and heat.
  2. Season the chuck roast with salt and pepper, then sear for 3-4 minutes on each side until golden brown. Remove the roast.
  3. Add sliced onions and minced garlic to the pot; sauté for about 5 minutes until fragrant.
  4. Pour in beef broth and scrape up any browned bits from the bottom.
  5. Return the roast to the pot along with remaining broth and spices. Stir well.
  6. Seal the lid and set the Instant Pot to 'Manual' mode on high pressure for 60 minutes.
  7. Allow natural pressure release for 10 minutes before manually releasing any remaining pressure. Shred the beef using two forks.
