- 3 lbs beef chuck roast
- 2 tsp Italian seasoning
- 2 bell peppers (sliced)
- 1 large onion (sliced)
- 4 cloves garlic (minced)
- 2 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
Instructions
- Gather and prepare all ingredients: slice bell peppers and onion, and mince garlic.
- In a skillet over medium-high heat, heat oil and sear the seasoned beef chuck roast on all sides until browned (3-4 minutes per side).
- Sauté sliced onions and bell peppers in the same skillet until softened (about 5 minutes). Add minced garlic and sauté for another minute.
- Transfer vegetables to a slow cooker or Dutch oven. Place the seared beef on top, then pour in the beef broth and Worcestershire sauce. Sprinkle with Italian seasoning.
- Cover and cook on low for about 8 hours or high for about 4 hours until fork-tender. Alternatively, bake covered at 300°F for the same time.
- Shred the beef with two forks, return it to the sauce, and serve on crusty rolls.
