  • 1 cup sliced bok choy (70g)
  • 1/2 cup sliced carrots (60g)
  • 2 tsp sesame oil
  • 2 tbsp gochujang (Korean chili paste)
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Prepare your ingredients: Slice the vegetables and boil water in a large pot.
  2. Cook the noodles: Add ramen noodles to boiling water; cook for about 3 minutes, then drain.
  3. Sauté vegetables: In a skillet, heat sesame oil over medium heat; add the vegetables and sauté for about 5 minutes.
  4. Add rice cakes: Mix in rice cakes; stir-fry together for another 2 minutes until heated through.
  5. Make the sauce: Whisk soy sauce and gochujang in a small bowl; pour over the vegetable-rice cake mixture.
  6. Combine everything: Add cooked ramen noodles to the skillet; toss gently to combine on low heat for about 2 minutes.
